VINAIGRETTE TUNA SALAD WITH CAPERS
One of my first “adventurous” food decisions as a child was ordering a tuna melt with my dad at our favorite greasy diner, and I have loved it ever since.
My spin on classic tuna salad uses vinaigrette to pull it all together instead of the traditional mayo. Serve this over greens or top gluten-free or grain-free bread with the tuna salad and a slice of manchego or nondairy cheese and pop it under the broiler to make a tuna melt.
Serves 2-4
YOU WILL NEED
- 2 cans albacore tuna 
- ¼ cup red or orange bell pepper, chopped 
- Juice from 1 lemon 
- 3 tablespoons olive oil 
- 3 tablespoons apple cider vinegar or coconut vinegar 
- 2 tablespoons capers 
- 2 tablespoons shallots, chopped 
- 2 tablespoons whole grain mustard 
- 1 tablespoon fresh basil or flat leaf parsley, chopped 
- ½ teaspoon flaky sea salt 
- ¼ teaspoon black pepper 
TO MAKE
In a small mixing bowl, gently stir together all of the ingredients to combine.
