MANGO NOODLE SALAD WITH SESAME LIME DRESSING
This light and crisp salad is extra delicious for these warmer weather days.
Cold noodles are tossed with mango, crunchy vegetables, salty peanuts and a bright and tangy dressing.
Serves 2 to 4
YOU WILL NEED
- 1 cup glass noodles, shirataki noodles or kelp noodles 
- 1 honey mango, diced 
- 1 mini Persian cucumber, diced 
- 3 small red radishes, diced 
- 1/4 cup roasted peanuts 
- 1/4 cup Sesame Lime Dressing, recipe below 
- Fresh Cilantro, for serving 
- Micro greens or micro broccoli, for serving 
TO MAKE 
In a mixing bowl, gently toss together the noodles, mango, cucumber, radishes, peanuts, and Sesame Lime Dressing. 
Top the noodles with cilantro, micro greens and a few more peanuts.
Serve with the remaining dressing on the side.
for the SESAME LIME DRESSING
- 1/4 cup avocado oil 
- 1/4 cup apple cider vinegar 
- 3 tablespoons lime juice 
- 2 tablespoons toasted sesame oil 
- 2 tablespoons coconut aminos 
In a small pitcher, whisk together the avocado oil, apple cider vinegar, lime juice, sesame oil, and coconut aminos.
Store in a sealed container in the refrigerator for up to 5 days.
