BLT Salad
Comfort food in salad form…
I recently made little lettuce cups with bacon and tomato for breakfast and realized that, with a bit of finesse and some creamy dressing, it would make a delicious and nostalgic salad. An incredibly easy and tasty option for a summer day.
YOU WILL NEED
BLT Salad
1 head of butter lettuce
1/2 cup cherry tomatoes, quartered
7-8 slices of bacon, extra crispy
1/2 avocado, chopped
Lemony Mayo Dressing, for serving (recipe below)
Flaky sea salt, for serving
Ground black pepper, for serving
Lemony Mayo Dressing
1/4 cup mayonnaise (olive oil- or avocado oil-based, with no sugar added)
Juice from 1 lemon
1 teaspoon stone ground mustard
1/2 teaspoon fine sea salt
1/4 teaspoon ground black pepper
TO MAKE
BLT Salad
Arrange the butter lettuce leaves on a large serving platter.
Top the lettuce with the bacon, tomatoes, and avocado.
Drizzle the salad with the Lemony Mayo Dressing, flaky sea salt and black pepper.
Serve right away, and enjoy!
Lemony Mayo Dressing
In a small pitcher, whisk together the mayonnaise, lemon juice, mustard, salt and pepper.
Use right away or store in a sealed container for up to one week, whisking well before serving.
