CHICKEN APPLE BREAKFAST SAUSAGE
My kiddos go through frozen chicken sausage like it’s nobody’s business…
…so I decided to try my hand at making my own. Another way to boost my protein intake, my need for which has only increased with age.
In fact, I used to avoid eating meat until later in the day and just a few times a week, as I found it decreased my energy levels. With age, things have shifted, and I find that high protein consumption helps sustain me through the day. Just another reminder to be in touch with our bodies and the various ways of eating that can benefit us during different stages of life.
To keep things as anti-inflammatory as possible, I prefer to use meat from chicken that was raised and fed as naturally as possible.
YOU WILL NEED
1 tablespoon ghee
1 honeycrisp apple, finely chopped
1 tablespoon local honey
1 clove garlic, finely chopped
1/2 teaspoon nutmeg
1 pound ground chicken
2 teaspoons salt
1/2 teaspoon ground black pepper
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
TO MAKE
Melt the ghee in a small pan or cast iron skillet set over medium heat. Add the apples, honey, garlic, and nutmeg, stirring to sauté until the apples are golden brown and tender.
In a mixing bowl, add the ground chicken, cooked apples, salt, pepper, and thyme. Gently mix until combined. Wet your hands (makes it a whole lot easier), and shape the chicken apple mixture into palm sized sausage patties or links.
Using the pan that the apples were cooked in, cook the sausages on one side over medium heat until golden brown. Flip the sausages to cook on the other side until golden and cooked through.
Serve right away or keep refrigerated in a sealed container for up to 5 days, gently reheating when ready to serve.
