DATE HUMMUS
My favorite hummus was recently discontinued, so I figured I had to find a way to make it on my own. This subtly sweet hummus is delicious with crudités or crackers.
As much as I don’t love using canned vegetables, for this recipe, it sure makes things a lot easier.
YOU WILL NEED
- 1 - 15 ounce can garbanzo beans/chickpeas, rinsed and drained 
- 1/4 cup extra virgin olive oil 
- 1/4 cup freshly squeezed lemon juice 
- 3 dates, pitted 
- 1 garlic clove 
- 1 tablespoon flax seeds 
- 1/2 teaspoon ground cumin 
- 1/2 teaspoon fine sea salt 
TO MAKE
In a high-powered blender or food processor, add the garbanzo beans, olive oil, lemon juice, dates, garlic, flax seeds, cumin and salt. Begin processing at a slow speed, and slowly increase the speed, scraping down the sides occasionally to ensure all the little bits are puréed.
Keep in a sealed container in the refrigerator for up to 1 week.
Serve with crackers or crudités. Enjoy!
