NOT YOUR DRIVE THRU CHICKEN TENDERS WITH HONEY MUSTARD
Blew my own mind with these… pure nostalgia.
Growing up in the South most likely results in eating an ungodly amount of fried chicken, not to mention a particular, incredibly delicious drive-thru chicken nugget with honey mustard.
This is my cleaned up version using a grain free batter and no junk honey mustard. Let me just tell you… these did not disappoint!
YOU WILL NEED
1 cup unsweetened, unflavored kefir or non-dairy yogurt
1 teaspoon hot sauce
1/2 teaspoon fine sea salt
1/4 teaspoon black pepper
10-12 chicken tenders
1 cup cassava flour
1/2 cup almond flour
2 teaspoons of salt
1 teaspoon garlic powder
1/2 teaspoon sweet paprika
Ghee
Honey Mustard, recipe below
TO MAKE
In a medium bowl, stir together the kefir, hot sauce, salt and pepper. Add the chicken tenders to soak in the refrigerator for at least 30 minutes.
In a separate bowl, stir together the cassava flour, almond flour, salt, garlic powder, and sweet paprika.
Dip each soaked chicken tender in the flour mixture until well-coated.
In a large cast-iron skillet or frying pan set over medium heat, melt ghee to coat an even layer on the bottom of the pan.
Place each coated chicken tender in the pan so they’re well-spaced. Let them cook until golden, about 5-7 minutes, and flip to cook until the other side is golden, making sure the chicken is cooked through. This may require cooking in a couple batches.
Serve right away with Honey Mustard.
for the Honey Mustard
3 tablespoons yellow mustard or stoneground mustard
1/4 cup olive oil
Juice from one lemon
1 tablespoon raw, local honey or Manuka honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
In a small pitcher or bowl, whisk together the mustard, olive oil, lemon juice, honey, salt and pepper.
Serve right away or refrigerate in a sealed container for up to 1 week.
